A quickie for when you're hot and don't want to resort to dairy products to 'fill the need'
There are many versions of this recipe, and it can be done your own way if you have ideas, but we love a good banana-walnut pancake, so why not turn your hotcakes into cold confection?
Your friends and family won't believe that this is plant-based! As long as you have enough very ripe frozen banana pieces you can make as much as you want.
Ingredients for 2 servings:
1/4 cup walnuts
2 very ripe bananas cut in chunks and frozen
1/3 cup unsweetened soy, hemp or almond milk
1 teaspoon vanilla bean powder OR vanilla extract
Step 1: Instructions
Best to use a high-powered blender like Vitamix or Blendtec, but if you have a lower-powered blender you can just run it longer and expect that it will be slightly less creamy. Food processors work well too!
Blend the walnuts to a powder using your blender, then add the rest of the ingredients, adding milk a little at a time until you reach the consistency you prefer.
This can be stored in the freezer if you aren't eating it right away.
